This delightful dish combines the earthy flavors of a large pumpkin with succulent lamb meat (or chicken, if you prefer) and aromatic spices. With a filling of fragrant rice, mixed vegetables, raisins, and a touch of pumpkin spice, this recipe is sure to become a favorite for fall gatherings or special occasions.
Ingredients:
- One large pumpkin
- 2 pounds of lamb meat (or chicken) For the Rice:
- 3 cups of rice
- One large onion
- 1 cup mixed vegetables
- 1/2 cup raisins
- 1 tablespoon pumpkin spice
- 1/2 tablespoon turmeric
- 1/2 tablespoon black pepper
- 3 teaspoons salt
- 4 cups of hot water
- Salt and pepper, as needed
- 1 medium-sized onion
- 1 tomato
- 2 medium carrots
- 4 bay leaves
- 4 cardamom pods
- 2 tablespoons room temperature butter
- 2 tablespoons oil
Instructions:
- Start by preparing the lamb. Stir-fry the meat with vegetables and spices until fully cooked. Add water, salt, and pepper, and let it simmer on medium-high heat until tender and flavorful.
- In a separate pan, stir-fry the onion, raisins, mixed vegetables, and spices for the rice. Add the rice and 1 cup of lamb broth. Let it cook on low-medium heat for 5 minutes, allowing the flavors to meld together.
- Preheat your oven to 400°F (200°C).
- Slice the top off the pumpkin and set it aside. Clean out the seeds and pulp from the inside of the pumpkin.
- Grease the inside of the pumpkin with room temperature butter, ensuring it is evenly coated. Then, grease the outside of the pumpkin with oil to help it cook and retain moisture.
- Stuff the pumpkin with half of the prepared rice mixture, followed by the cooked lamb meat, and finish with the remaining rice mixture.
- Place the pumpkin top back on, covering the stuffing.
- Transfer the stuffed pumpkin to a baking dish and place it in the preheated oven.
- Bake for approximately 2 hours, or until the pumpkin is tender.
