Ingredients:
- 2 cups all-purpose flour (more as needed for dough consistency)
- 1/4 cup granulated sugar
- 1/2 teaspoon saffron threads with 2 ice cubes (alternatively, use ground cardamom or any preferred herb/spice flavor)
- 1/2 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 4/3 cup warm milk
- 1 egg
- 1/4 cup unsalted butter, melted
- 1/2 cup raisins
- 1 egg yolk (for egg wash)
- 1 tablespoon butter for filling
- 2 tablespoons brown sugar for filling
Instructions:
- In a small bowl, crush the saffron threads with a mortar and pestle or the back of a spoon until it becomes a powder. Then add it to the ice cubes.
- In a large mixing bowl, combine the flour, sugar, and salt.
- In a separate small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until it becomes frothy.
- Pour the yeast mixture, saffron mixture, melted butter, and egg into the dry ingredients. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it doubles in size.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the dough into a rectangle as much as possible. Spread 1 tablespoon of butter on it and sprinkle 2 tablespoons of brown sugar.
- Place the raisins on top and press them into the dough.
- Shape the dough into a round loaf or desired shape and place it on the prepared baking sheet.
- Brush the top of the bread with the beaten egg yolk and sprinkle with pearl sugar if desired.
- Bake in the preheated oven for about 20-25 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Remove from the oven and let it cool on a wire rack before slicing and serving.
